Protein-packed, iron-rich, and freezer friendly—a go-to for quick postpartum dinners.

Ingredients :

  • 1 lb ground beef or bison

  • 1 onion, chopped.

  • 1 red pepper, chopped.

  • 2 cloves garlic, minced

  • 1 can kidney beans, rinsed

  • 1 can black beans, rinsed

  • 1 can crushed tomatoes (796 ml)

  • 1 cup cooked quinoa

  • 2 tbsp chili powder

  • 1 tsp cumin

  • Olive oil, salt & pepper

Directions :

  1. Heat oil in a pot, saute onion, pepper, and garlic until soft.

  2. Add beef, cook until browned. Drain any excess fat.

  3. Stir in beans, tomatoes, quinoa, and spices. Simmer 20-25 min.

  4. Adjust seasoning to taste.

Tip: Divide into freezer bags (lay flat to freeze) or containers. Defrost overnight and reheat on stove.
