Beef & Quinoa Chili
Protein-packed, iron-rich, and freezer friendly—a go-to for quick postpartum dinners.
Ingredients :
1 lb ground beef or bison
1 onion, chopped.
1 red pepper, chopped.
2 cloves garlic, minced
1 can kidney beans, rinsed
1 can black beans, rinsed
1 can crushed tomatoes (796 ml)
1 cup cooked quinoa
2 tbsp chili powder
1 tsp cumin
Olive oil, salt & pepper
Directions :
Heat oil in a pot, saute onion, pepper, and garlic until soft.
Add beef, cook until browned. Drain any excess fat.
Stir in beans, tomatoes, quinoa, and spices. Simmer 20-25 min.
Adjust seasoning to taste.
Tip: Divide into freezer bags (lay flat to freeze) or containers. Defrost overnight and reheat on stove.
