Hearty Lentil & Veggie Stew
Rich in fibre, protein, and minerals—perfect for recovery and easy to reheat.
Ingredients :
2 cups green or brown lentils (rinsed)
1 onion, chopped
3 carrots, chopped
3 celery stalks, chopped
3 cloves garlic, minced
1 can diced tomatoes (796 ml)
6 cups vegetable or chicken broth
1 tsp cumin
1 tsp smoked paprika
2 cups chopped kale or spinach
2 tbsp olive oil
Salt & pepper to taste
Directions :
In a large pot, heat olive oil and saute onion, carrot, celery, and garlic until softened.
Add lentils, tomatoes, broth, and spices. Bring to boil, then simmer for 30-40 min until lentils are tender.
Stir in greens at the end. Adjust seasoning.
Tip: Portion into mason jars or freezer containers. Freeze up to 3 months. Reheat gently on stovetop.
