Ingredients :

  • 2 cups green or brown lentils (rinsed)

  • 1 onion, chopped

  • 3 carrots, chopped

  • 3 celery stalks, chopped

  • 3 cloves garlic, minced

  • 1 can diced tomatoes (796 ml)

  • 6 cups vegetable or chicken broth

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 2 cups chopped kale or spinach

  • 2 tbsp olive oil

  • Salt & pepper to taste

Directions :

  1. In a large pot, heat olive oil and saute onion, carrot, celery, and garlic until softened.

  2. Add lentils, tomatoes, broth, and spices. Bring to boil, then simmer for 30-40 min until lentils are tender.

  3. Stir in greens at the end. Adjust seasoning.

Tip: Portion into mason jars or freezer containers. Freeze up to 3 months. Reheat gently on stovetop.
