Low Carb Turkey & Lettuce Tacos
A fun dinner that skips the blood sugar spikes of flour tortillas.
Why it works: Lettuce wraps keep carbs ultra-low; turkey filling adds protein and fat. Clients can add avocado for more balance.
Ingredients (4 servings) :
1 lb ground turkey
1 tbsp olive oil
1 tsp chili powder
1 tsp cumin
1 clove garlic, minced
1 cup diced tomatoes
8-10 large lettuce leaves (romaine or butter)
Toppings: shredded cheese, avocado slices, salsa
Directions :
Heat olive oil in skillet. Cook turkey with garlic until browned. Add spices and tomatoes; simmer 5-7 min.
Wash and pat lettuce leaves dry.
Spoon turkey mixture into lettuce “shells” and top with cheese, avocado, or salsa.
Tip: These are messy in the best way—I encourage clients to eat 3-4 for a satisfying, blood-sugar-friendly meal
