20-Minute Sheet Pan Salmon & Veggies
A set-it-and-forget-it-dinner—minimal effort, maximum nutrition.
Why it works: Omega 3’s in salmon support healing and mood, roasted veggies = fibre + vitamins. Only one pan to wash.
Ingredients (serves 2-3) :
2 salmon fillets (or chicken thighs if preferred)
2 cups chopped veggies (broccoli, carrots, zucchini, etc.)
2 tbsp olive oil
1 tsp garlic powder or Italian seasoning
Salt & pepper to taste
Lemon wedges (optional)
Directions :
Preheat oven to 400°F. Line a sheet pan with parchment
Place salmon on one side, veggies on the other
Drizzle olive oil over all, sprinkle seasoning, salt & pepper. Toss veggies lightly.
Bake 15-20 minutes, until salmon flakes and veggies are tender.
Tip: Serve with microwavable rice or quinoa for a complete meal.
