20-Minute sheet Pan Salmon & Veggies, a set it and forget it dinner with minimal effort and maximum nutrition

A set-it-and-forget-it-dinner—minimal effort, maximum nutrition.

Why it works: Omega 3’s in salmon support healing and mood, roasted veggies = fibre + vitamins. Only one pan to wash.

Ingredients (serves 2-3) :

  • 2 salmon fillets (or chicken thighs if preferred)

  • 2 cups chopped veggies (broccoli, carrots, zucchini, etc.)

  • 2 tbsp olive oil

  • 1 tsp garlic powder or Italian seasoning

  • Salt & pepper to taste

  • Lemon wedges (optional)

Directions :

  1. Preheat oven to 400°F. Line a sheet pan with parchment

  2. Place salmon on one side, veggies on the other

  3. Drizzle olive oil over all, sprinkle seasoning, salt & pepper. Toss veggies lightly.

  4. Bake 15-20 minutes, until salmon flakes and veggies are tender.
