Veggie Egg Muffins (Protein-Rich Breakfast)
A savoury, high-protein option to replace high-carb breakfast foods like toast or cereal.
Why it works: Eggs + cheese = protein + fat; veggies add fibre. Keeps blood sugar steady for hours.
Ingredients (makes 12) :
8 eggs
1/2 cup milk (dairy or unsweetened almond)
1 cup spinach, chopped
1 red bell pepper, diced
1/2 cup shredded cheese
1/2 tsp garlic powder
Pinch salte & pepper
Directions :
Preheat oven to 350°F. Line a muffin tin with parchment liners.
Whisk eggs, milk, salt, and pepper. Stir in veggies, cheese, and garlic powder.
Pour into muffin cups and bake 20-25 min until set
Tip: Store in the fridge up to 4 days or freeze. Pair with 1/2 an avocado for extra satiety.
