Ingredients (makes 12) :

  • 8 eggs

  • 1/2 cup milk (dairy or unsweetened almond)

  • 1 cup spinach, chopped

  • 1 red bell pepper, diced

  • 1/2 cup shredded cheese

  • 1/2 tsp garlic powder

  • Pinch salte & pepper

Directions :

  1. Preheat oven to 350°F. Line a muffin tin with parchment liners.

  2. Whisk eggs, milk, salt, and pepper. Stir in veggies, cheese, and garlic powder.

  3. Pour into muffin cups and bake 20-25 min until set
